A day in the White City, where the best moments often turn out to be the ones we never planned in the first place.<\/em><\/h2>\n\n\n\n

The day begins in the garden of Paragon 700<\/a>. Breakfast under the orange trees, the first coffee of the day, while the tables around us slowly begin to fill. Someone is already discussing their plans for the day, while another cappuccino arrives at the table next to us. After a few mornings, some of the faces start to look familiar: they were sitting here yesterday, we may have seen them at the bar in the evening, and today we are starting another day together while deciding what we would like to see in Ostuni.<\/p>\n\n\n\n

Then the door of Palazzo Rosso opens, and just a few steps later, its red walls give way to the almost dazzling white of Ostuni.<\/strong><\/p>\n\n\n\n

Why is the White City actually white?<\/h2>\n\n\n\n

Ostuni is known as the Citt\u00e0 Bianca, the White City, for good reason.<\/strong> Its white houses have become the symbol of the city, although they certainly were not originally created as the perfect backdrop for summer photographs. Whitewashing the fa\u00e7ades is a centuries-old tradition. Lime was readily available, the bright surfaces were a practical solution beneath the southern Italian sun, and its disinfectant properties also made it valuable during times of epidemics. Today, what we notice first is how easy it is to forget where we were originally going. Steps lead into new alleyways, little squares hide behind archways, and somehow the next street always looks more interesting than the one we are already walking along. Somewhere we stop for another coffee \u2013 we are in Italy, after all \u2013 and then continue. As we climb higher, the Adriatic appears every now and then between the houses, while olive groves stretch towards the horizon below the city. A few things have probably disappeared from our morning plan by now. In return, we have discovered others that were never on it at all.<\/strong><\/p>\n\n\n\n

Ostuni outside, Paragon inside<\/h2>\n\n\n\n

Around midday, those same white streets suddenly feel very different. Shade becomes more valuable, lunch sounds increasingly tempting, and the pool at Paragon starts to look better with every passing minute. We make our way back, and this is exactly when we begin to appreciate just how special the location of Paragon 700<\/a> is. The door of Palazzo Rosso<\/strong> closes behind us, leaving Ostuni’s hot streets outside, while inside lies the largest private garden in the historic centre, with orange trees, shade and a pool. <\/strong><\/p>\n\n\n\n

We do not have to choose between the city and the hotel.<\/strong> In the morning, we explore Ostuni; in the afternoon, we swim, order something cold to drink and pick up the book we probably will not get much further into today either. Across the pool, we might even recognise one of those familiar faces from breakfast. By now, the day looks quite different from the one we planned that morning \u2013 and we are perfectly happy with that.<\/p>\n\n\n\n

Seven metres beneath the streets we walked that morning<\/h2>\n\n\n\n

One of the most extraordinary parts of Paragon 700<\/strong> is completely hidden from the street. Around seven metres beneath Ostuni, the hotel’s spa occupies the former water reservoir of the palazzo.<\/strong> Only a few hours earlier, we were walking between the white houses above. Now, beneath the very same city, we are surrounded by stone and water. In the course of a single day, our surroundings change completely several times, even though we have barely moved more than a few hundred metres. As the shadows outside grow longer, we head back into the city.<\/p>\n\n\n\n

Ostuni in the evening<\/h2>\n\n\n\n

We walk along the same streets where, only a few hours earlier, we were constantly checking the map. By evening, we already recognise a corner here and there. We know where to find the little place where we stopped that morning, and return to an alley we had simply passed by before. Meanwhile, the tables begin to fill, aperitivi arrive, doors stand open and more and more conversations spill into the streets. In the morning, everything was new. By evening, there are already places connected to a small memory of our own. <\/p>\n\n\n\n

That is exactly why spending a few days in a city feels so different from visiting for only a few hours. We experience Ostuni in the morning as the day begins, in the heat of midday and later again as the streets fill in the evening.<\/strong> Paragon is only a few steps away throughout it all, so we can return whenever we like and head out again later. After a while, we know exactly where we want to be at each part of the day.<\/p>\n\n\n\n

And why is it called Paragon 700?<\/h2>\n\n\n\n

Standing in front of the red palazzo again that evening, a question comes to mind that we could easily have asked when we first arrived: what does the name Paragon 700 actually mean?<\/strong><\/p>\n\n\n\n

The story leads back to the distinctive fa\u00e7ade of the palazzo. Its stones reminded the owners of a cut diamond, creating the connection to the Paragon, the name of a famous diamond.<\/strong> The number 700 refers to the building’s location between Ostuni’s 700 and 800 quarters. And now that we know where its name comes from, it is worth knowing what these walls witnessed long before the hotel existed. The palazzo was once home to Don Paolo Tanzarella<\/strong>, who was involved in the movement for Italian unification. Secret meetings took place here before Ostuni became the first city in Apulia to proclaim Italian unity in 1860. Tanzarella later became the city’s first mayor. Today, we have breakfast within these same walls, order cocktails, have dinner in the garden and discuss where we might go tomorrow. Not a bad next chapter in the story of a centuries-old palazzo.<\/strong><\/p>\n\n\n\n

What was never on the morning plan<\/h2>\n\n\n\n

Over breakfast, it is easy to decide what we absolutely want to see that day. A few hours later, however, we find ourselves walking down a street whose name we do not even know, returning for another coffee to a table that caught our eye earlier, or simply staying by the pool longer because that is exactly what we feel like doing. By the end of the day, the places we remember most fondly are not necessarily the ones we marked on the map that morning. There is the glimpse of the Adriatic that suddenly appeared between two houses, the alley we turned into simply because we were curious, or evening in Ostuni, when only a few hours later we find ourselves turning the same corner as if we already know the way.<\/p>\n\n\n\n

That is exactly what makes spending a few days here so special: we can arrive with plenty of plans and still leave enough room for everything we did not even know we wanted to see before the trip.<\/strong><\/h2>\n<\/blockquote>\n\n\n\n
