But <strong>Hermann Neudegger<\/strong>, the hotel manager, isn\u2019t just a passionate gourmet, he\u2019s also a trained chef himself. He knows what\u2019s important in the kitchen: <strong>respectful handling of food and regionality<\/strong>. On the latter point, the hotel family laid a solid foundation by establishing their <strong>own butcher\u2019s<\/strong> and has since got the main ingredients for their delicious meat dishes pretty much off their own shelves, including venison from the local forests for their legendary roast venison:<\/p>\n\n\n\n<figure class=\"wp-block-gallery columns-2 is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\"><ul class=\"blocks-gallery-grid\"><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" src=\"https:\/\/www.thestylemate.com\/wp-content\/uploads\/\/DSF32842-683x1024.jpg\" alt=\"\" data-id=\"71393\" data-full-url=\"https:\/\/www.thestylemate.com\/wp-content\/uploads\/DSF32842-scaled.jpg\" data-link=\"https:\/\/www.thestylemate.com\/?attachment_id=71393\" class=\"wp-image-71393\"\/><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" src=\"https:\/\/www.thestylemate.com\/wp-content\/uploads\/\/DSF32943-683x1024.jpg\" alt=\"\" data-id=\"71395\" data-full-url=\"https:\/\/www.thestylemate.com\/wp-content\/uploads\/DSF32943-scaled.jpg\" data-link=\"https:\/\/www.thestylemate.com\/?attachment_id=71395\" class=\"wp-image-71395\"\/><\/figure><\/li><\/ul><\/figure>\n\n\n\n<div style=\"height:31px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<div style=\"height:26px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Nesslerhofs Roast Venison Using Local Game<\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/www.thestylemate.com\/wp-content\/uploads\/P7A2421.jpg\" alt=\"Nesslerhof - Roast Venison\" class=\"wp-image-71804\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ingredients to serve 6<\/strong><\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>For the Roast:<\/strong><br>1 kg boneless venison haunch<br>Salt, pepper, thyme<br>2 onions, roughly chopped<br>\u00bd celeriac and 3 carrots, diced<br>2 tsp tomato pur\u00e9e<br>1 splash red wine<br>250 ml beef or game stock<br>2 garlic cloves<br>2 bay leaves<br>15 juniper berries<br>2 tsp cranberry jam<br>Clarified butter<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>For the Sp\u00e4tzle:<br><\/strong>500 g coarse-grained flour<br>9 eggs<br>Salt, pepper, nutmeg<\/p>\n\n\n\n<p><strong>For the Red Cabbage:<br><\/strong>5 tbsp oil<br>1 onion, chopped<br>2 apples, diced<br>1 tbsp sugar<br>2 kg red cabbage, shredded<br>1 splash vinegar<br>250 ml orange juice<br>2 bay leaves, pepper, salt<br>1 splash red wine<\/p>\n<\/div>\n<\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Method<\/strong><\/h3>\n\n\n\n<p>Season the meat well and sear in a hot roaster with the clarified butter. Pre-heat the oven to 130\u00b0C, remove the meat from the pan and put to one side. Brown the vegetables and onions. Add the tomato pur\u00e9e, deglaze with the red wine and leave to reduce. Pour in the stock, bring to the boil then add the remaining herbs. Put the meat back into the pan, cover and stew in the oven for 2 hours. Finally, remove the meat and strain the juices. Stir the jam into the sauce. Add a thickening agent if required.<\/p>\n\n\n\n<p>Mix all of the ingredients for the Sp\u00e4tzle into a dough using a dough hook. Press the dough through a Sp\u00e4tzle sieve into a large pan of boiling, salted water. Stir continuously, bring to the boil then drain the Sp\u00e4tzle. Rinse in iced water. For the red cabbage, sweat the onion in oil, add the apple and sugar and saut\u00e9 briefly. Add the red cabbage to the pan, deglaze with vinegar and steam for around 10 minutes with the lid on. Pour the orange juice over the cabbage and season, then gently steam for around 35 minutes and refine with red wine.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>To serve<\/strong><\/h3>\n\n\n\n<p>Carve the venison into slices and reheat the sauce. Heat the Sp\u00e4tzle with some butter and garnish with chives.
