Two historic fincas, one quiet retreat in Menorca.

Set in the green north of Menorca, within an expansive private estate of around 800 hectares, Son Ermita and Binidufà are two historic fincas dating back to the 18th century. Connected by landscape and heritage, yet distinct in character, Son Ermita sits elevated with far-reaching views towards the sea, while Binidufà rests quietly in the valley below. Together, they form a discreet retreat far removed from the island’s busier routes.

Concept

Architecture & Design

The restoration honours the original fabric of the fincas. Solid stone walls, exposed wooden beams and historic structures have been carefully preserved and complemented with contemporary comfort. Interiors are defined by warm earth tones, handcrafted furniture and selected antiques, creating an atmosphere that feels understated, timeless and deeply rooted in Menorca’s landscape.

Behind the classic Bruges brick façade lies an interior that masterfully conducts a delicate dialogue between past and present. The new Seegut Zeppelin, which opened its doors on 6 May 2024, is located in the middle of an old landscaped park directly on Lake Constance. The hotel buildings clad in glazed spruce wood around the Villa Gminder in Friedrichshafen-Fischbach are just 50 metres from the shore. The modern solitary buildings blend discreetly into the protected park. Inside, the surrounding nature is impressively restaged through wall-high windows. The furnishings are based on natural materials and high-quality design; the cuisine is based on an innovative concept with a vegetarian focus. The name of the hotel is Seegut Zeppelin.

The Seegut Zeppelin is one of the few hotels on Lake Constance that is located directly on the shore and has its own access to the lake. Generosity, space and outstanding interior design characterise the four modern stand-alone buildings that surround the listed Villa Gminder.

The 62 rooms, reception, bar and wellness area are located in the new buildings. The function rooms are spread across the new buildings and the villa. Inside, views of the lake, the park and the fruit and herb garden open up again and again. Brand-name furniture from Freifrau and the Stuhlmanufaktur horgenglarus make the hearts of design lovers beat faster. Home textiles made of linen and cotton create a link to the textile manufacturer Gustav Gminder, who once had the villa built in the centre of the complex.

Rooms

All rooms at the Seegut have a balcony or terrace. We particularly recommend the forest rooms in Haus August or the park rooms in Haus Helene, as they offer a marvellous view of the lake. The rooms are furnished with great attention to detail. Silver fir panelling, oak floorboards and lime plaster create an atmosphere that reflects a refuge in the middle of nature. Here I can come to rest and enjoy the time. Mindfulness is very important here, especially in our fast-moving times.

Culinary

Villa Gminder is home to the Pinus restaurant, named after an impressive black pine tree between the restaurant and the lakeshore. The cuisine at Pinus has a clear vegetarian focus and places the sharing principle at the centre, with different components served at the same time.

History

The wealthy textile manufacturer Gustav Gminder from Reutlingen had secured a marvellous lakeside property for his family’s “summer retreat” on the shores of Lake Constance in Fischbach. The well-known architect of the time, Theodor Fischer, was commissioned to design a villa. In 1929, the Evangelical Deaconess Institution bought the property and operated it intermittently as a hospital, convalescent home and later as a holiday and conference centre. In 2014, the Deaconess House found new owners: Luftschiffbau Zeppelin GmbH acquired the property and operated it as a holiday and conference centre through a subsidiary. However, due to the outdated building fabric and the existing room structure, the guest house could not be run profitably. A new design was therefore considered, with which the Plösser architects’ office from Friedrichshafen was commissioned. At the beginning of 2016, the Fennel family won the tender to run the guesthouse with their sustainability-focussed concept.

The hotel’s special location in the middle of a protected landscape park means even greater responsibility towards the surrounding nature. Care is taken to ensure that the shore area is only moderately frequented all year round and, in particular, that the peace and quiet of the wild birds wintering in Fischbach Bay is not disturbed. The eastern part of the park is separated by a hedge of wild shrubs and is reserved exclusively for flora and fauna.

Raw Luxury

The in-house restaurant, Orizon, offers a refined, contemporary Greek menu crafted by the renowned Michelin-starred Chef Lefteris Lazarou. The culinary experience is accompanied by the finest local and international wines.

Best Room Superior Cave Suite

The Superior Cave Suite with a private outdoor pool and sea view is approximately 70m². It consists of a master bedroom with a king-size bed, a bathroom, separate toilet, and a spacious living area. The outdoor space covers about 60m² with a shaded deck featuring a large daybed, dining table, and chairs, a sun deck with double loungers, and a heated infinity pool. The outdoor heated infinity pool offers direct spectacular views of the Aegean Sea.

The fact that the small town of Bacalar, located on the Yucatán Peninsula, bears the title of “Pueblo Mágico” sounds promising. After all, Mexico’s Secretariat for Tourism explicitly awards this distinction to towns that shine with their typical and well-kept character. However, Bacalar’s surroundings with their tropical vegetation and the beautiful Laguna de los Siete Colores (Lagoon of the Seven Colors) are also considered “magical.

Tree house living

Designed by renowned Mexican architect Frida Escobedo and hidden in dense greenery, the Boca de Agua fascinates not only with its unusual architecture. That a place was to be created here that would contribute to ecological, social and cultural regeneration and offer visitors an equally regenerative, unique experience is palpable just by looking at it: the 26 accommodations are in tree houses resting on pillars. And what gives guests the extra feeling of virtually floating in the treetops also serves to protect nature. This leaves the ground undeveloped, which in turn reduces the environmental impact.

Thanks to the pile construction, more than 90 percent of the site remained intact during the construction of the hotel buildings. Escobedo and the developers of the Boca de Agua also paid attention to sustainability when it came to building materials: The facility is made of wood and stone. Designed in such a way that it will age naturally over the years and, as it were, make its own history visible.

Authentic, sustainable design

Most of the furniture at Boca de Agua was designed by an in-house team and local craftsmen. And it was done using recycled waste from surrounding industrial companies, such as leftover wood from a regional plywood factory. But exclusive pieces from Mexican and local brands, such as light fixtures by Bandido Studio, furnishings and décor details by Cacao Design, Nossara Towel and Hacha Ceramics, also characterize the comfortably simple interior.

The 22 suites and four guest rooms are dominated by wood, soft neutral tones and lots of natural light. This results in a relaxed ambience and actually allows the interiors to merge almost magically with the nature all around when looking outside. Not only that, but the Boca de Agua is designed so that guests can share the space with the largely intact jungle. Also with the wild animals that roam freely on the property of the complex.

Best room

In the Master Pool Treehouse you can enjoy every conceivable luxury and privacy on 75m². It has its own pool, a spacious terrace and furniture specially designed for the hotel. We promise you: “you will never want to leave here again”.

Recreation with “conscious” extra

In addition to its villas, the Boca de Agua of course has amenities such as a pool, roof terrace overlooking the lagoon, its own jetty, restaurant, bar and terraces. Activities of all kinds are also provided at the “magical” hotel – from “treehouse massages” to kayak or sailing tours. In addition, guests can also participate in local projects if they wish. And there are many such projects.

Boca de Agua is collaborating with the local community, local universities, regional non-governmental as well as governmental organizations to develop what is currently the only project with a rehabilitated mangrove ecosystem on the sea in Bacalar.

Culinary, local & organic

It goes without saying that the operators of the Boca de Agua also focus on regional cuisine: The resort’s restaurant serves Yucatecan cuisine enhanced by international influences – prepared from local organic products.

The Taverna

Simple and unpretentious, the TAVERNA is traditional at heart and contemporary in spirit. Savoury and crispy pies made with handmade phyllo, fresh vegetables sourced from the island farms, local Myconian cheeses, and the freshest fish food are there to delight your palate. Daily plates are on the menu featuring authentic recipes from all over Greece. The quality is top – from the meat that is served to the catch of the day.

Raw

Curved on the rocks, with enthralling views to the sea, RAW, the new restaurant at the WILD hotel is a feast for the senses. A dinner only restaurant, the new RAW at the WILD hotel is an ode to raw delights. Blessed with a unique location, curved on the rocks, the RAW is secluded and private, a place to be seduced and enjoy a fusion of Mediterranean and Japanese flavours. Tables for two, four or six are scattered in different levels surrounded by the wildly beautiful scenery and the inspiring views to the sea. Emphasis is on delectable seafood, sourced daily by local fishermen and sushi prepared masterfully by Greek-Japanese chef Kazouaki Sitamori.
